While a healthy breakfast is one thing, healthy snacking is a whole other animal! Take a little moment out of your day to roll these granola bites and you’ll have 20 snacks in the blink of an eye. Soft, sweet and loaded with fiber, these mouthfuls of heaven use rich ingredients like granola, quinoa, buckwheat, nuts and dates. Throw in a hint of lemon and a dash of ginger, and you get an even fresher, more savory experience with a kick to it. A handful of these at night will curb those hunger pangs, and they’re easily shareable!
200g medjool dates, pitted
80g cashew nuts
juice of 1/2 lemon
zest of 1/2 lemon, finely grated
50g FLOOM Quinoa & Buckwheat granola
25g unsweetened desiccated coconut
1 tsp ground cinnamon
1 tsp ground ginger
pinch of sea salt
In a food processor pulse the almonds and cashew nuts until they crumble.
Add medjool dates, lemon juice and zest, FLOOM Quinoa & Buckwheat granola, cinnamon, ginger, sea salt and pulse to combine until a sticky dough forms.
Roll the mixture into little balls with your hands and cover them with desiccated coconut. Store in the fridge for up to 2 weeks.
